WHAT IS ZUPA TOSCANA?

    The Italian word "zuppa" means soup. “Toscana” refers to the Tuscany region of Italy. To summarize, "Zuppa Toscana" means "Tuscan soup" or "Tuscan soup style."

This sausage soup recipe features hearty and flavorful Big Easy Foods Louisiana Smoked Sausage

In addition to potatoes and kale, the American version adds Louisiana Smoked sausage, garlic, and heavy cream.

WHEN SERVING ZUPPA TOSCANA, WHAT SIDE DISHES ARE BEST?

Like the Italians, enjoy a nice, crusty baguette (with or without butter) with your soup. 
For a complete Mediterranean meal, add this Tomato Cucumber Salad or a simple side salad. 
If you prefer a vegetable side, roasted asparagus with lemon and parmesan complements this dish well.
Making homemade rolls or buying frozen ones from the freezer aisle makes a nice, accompaniment.


THE RECIPE


    Ingredients

1 pound Big Easy Foods Smoked Sausage or Louisiana Smoked Sausage can be substituted
4 tablespoons butter
½ white onion, diced
1 tablespoon minced garlic
6 cups chicken broth
2 cups water
4-5 yellow potatoes, cut into 1-inch pieces
3 teaspoons salt, or to taste
1 teaspoon black pepper
2 cups heavy cream
4 cups chopped kale
chopped bacon or bacon bits and grated parmesan cheese for topping, optional


    Instructions

1. Cook sausage in a large pot for five to six minutes until it is browned. Remove sausage from the pan and place it on a plate using a spoon. 

2. Add butter to the same pot and saute onions over medium heat until translucent. Continue to saute for another minute until garlic is fragrant.

3. Bring the chicken broth, water, potatoes, salt, and pepper to a boil. The potatoes should be boiled until they are tender. Heavy cream and kale should be stirred in. Add sausage. Depending on your taste, you may need to add salt and pepper.The dish can be garnished with grated parmesan cheese and/or bacon if desired.

Note: If you are using regular ground sausage, simply mix 1 teaspoon dried Italian herb seasoning with 1 pinch of crushed red pepper flakes.
