Cajun pasta with Louisiana Smoked Sausage
- Ingredients:
- Olive oil
- Bell peppers – red and green bell peppers.
- Red onion
- Garlic – minced cloves
- Big Easy Foods Smoked sausage, if not available, any Smoked Sausage or Louisiana-style sausage
- Pasta shells – penne pasta or macaroni noodles
- Chicken broth
- Diced tomatoes – diced tomatoes
- Cajun seasoning
- Hot sauce –Louisiana Hot Sauce, Red Rooster or Tabasco, but any Louisiana-style hot sauce will work.
- Directions:
- 1. Sausage and vegetables should be cooked together. Cook over medium-high heat in a large pot or skillet with olive oil.As soon as the oil is hot, add diced bell peppers, onions, garlic, and sausage links. After 4 to 6 minutes, remove from heat.
- 2. Add the remaining ingredients. To the pan, add pasta shells, chicken broth, diced tomatoes, Cajun seasoning, and hot sauce. Mix everything together. The chicken broth should almost completely cover the pasta.
- 3. Cook the pasta. Bring the broth in the skillet to a simmer, then cover, reduce the heat to low and cook for 10 minutes. Remove the lid, mix the pasta, replace the lid, and continue to cook for another 10 minutes.
- 4. The pasta is ready to be served. Serve the pasta after removing the lid. Garnish with fresh chopped parsley if desired.
