Ingredients


1 pound wild Caught American shrimp (peeled and deveined)

1/2 cup fresh lime juice (about 4-5 limes)

1/2 cup diced tomatoes

1/2 cup diced cucumber

1/4 cup finely chopped red onion

1/4 cup chopped fresh cilantro

1 jalapeño (seeded and finely chopped, optional)

Salt and pepper (to taste)

Avocado (for garnish, optional)

Tortilla chips (for serving)



Directions


Prepare the Shrimp:


In a bowl, combine the shrimp and lime juice. Ensure the shrimp are fully submerged in the juice.


Cover and refrigerate for about 30-40 minutes, or until the shrimp turn pink and opaque (this indicates they are "cooked" by the acidity of the lime juice).


Mix the Ingredients:


Once the shrimp are ready, drain a little of the lime juice if desired (leave some for flavor).

Add diced tomatoes, cucumber, red onion, cilantro, and jalapeño (if using). Stir to combine.


Season:


Season with salt and pepper to taste. Adjust lime juice as needed for acidity.
